Hungarian Sauerkraut Casserole

 2 cups Potatoes (peeled and chopped)
 3 tbsp Oil
 ¾ cup Salami (skin removed and cubed)
 1 Bunch spring onions (sliced)
 1 Red pepper (diced)
 2 Jars sauerkraut
 ½ cup Sour Cream
 4 Medium eggs
 ¾ cup Feta cheese (crumbled)

Preheat oven to 325°F. Cook potatoes in boiling salted water for 5-10 mins then drain and set aside.

Heat oil in a large saucepan and sauté salami. Add onions and peppers, briefly cook then add sauerkraut and cook for about 10 mins.

Add potatoes then transfer 1/2 mixture to a greased baking dish. Mix sour cream and eggs, season then pour 1/2 mixture over sauerkraut.

Top with another layer of sauerkraut and cream then top with feta and bake for 40-45 mins.
